The better idea for the realisim you're describing, in my opinion at least, would be some pop-ups every now and then, saying something like 'During the weekly/monthly stocktaking it turned out that some of merchandise was missing', and then you loose small amount of money on that day. I could be wrong, but I feel that it doesn't happen that often that people remove things attached to the walls And replacing stolen things can be also a bit annoying after some time. I mean, in my experience it was, for example, the whole soap dispenser, gone almost every single day. But then again, sometimes Sims steal not so realistic things. You got the point, it is realistic in a way.
